2 1/2 to 3 pounds Red Potatoes
1 cup Mayonnaise (or Miracle Whip)
1/2 cup Sour cream
2 tbs Dijon mustard
1 tsp Celery Seed
1/2 tsp Salt
1/4 tsp Pepper
8 oz Cheddar cheese, cubed
8 oz Monterey Jack cheese, cubed
2 cups Fully cooked Ham, cubed
3/4 cup Tomatoes, chopped
1/4 cup Green onions, sliced
1/4 cup Fresh parsley, minced
Cook potatoes in boiling salted water till tender (keeping skin on or off is your preference). Let them cool. In large salad bowl combine mayo, sour cream, mustard celery seed, salt and pepper, mix well. Cut potatoes into cubes. Add to mayo mixture and toss to coat. Add remaining ingredients; mix well. Cover and refrigerate at least 2 hours. Makes a huge bowl of salad.
