Great for showers, parties and special occasions as well as a casual picnic.
1 pkg (1 lb) Acini de pepe (by the noodles at the grocery store)
1 cup Sugar
1 3/4 cups Pineapple Juice
3 Eggs
1/2 tsp Salt
1 Lg can Crushed Pineapple, drained
1 can Pineapple tidbits or chunks
2 Lg cans Mandarin oranges
1 Sm pkg Miniature marshmallows (white)
1 container (12 oz) Cool Whip
1 Boil the macaroni in salted water until tender; drain and cool.
2 Mix sugar with pineapple juice, eggs and salt. Cook over medium heat, stirring constantly until mixture comes to a boil and thickens. Cool slightly and mix with macaroni. Refrigerate overnight.
3 Next day, add all the fruits and marshmallows and cool whip. Toss well. Serve cold.
Yield: Serves 15 to 20 people
***NOTE:
Rinse noodles with cool water when you drain them. This stops the cooking process and keeps them from becoming a big solid piece of noodle.
This recipe would be good with some marachino cherries added too.
***COMMENT: This is a novelty type dessert or side dish. It is one that you take to a picnic or a pot-luck and EVERYONE loves it...but they all say...what the heck is it? Then you tell them the name and they say, "OH...it does have those weird round things in it...what are those?" Definetly a conversation starter. My Mom has been making this one for YEARS! I don't know if she found this recipe or if she just made it up one day. There are alot of versions of this out there. I like my Mom's version.
