Chicken Parmigana

Breaded Chicken Cutlets
1 1/2 cup Italian tomato sauce
or pizza sauce or spaghetti sauce
1/2 cup grated Parmesan cheese
6 oz mozzarella cheese, thinly sliced
Chopped fresh parsley (optional)

Brown chicken cutlets in a pan with melted butter.

Preheat oven to 350°F. Lightly oil a 13 x 9-inch baking pan or shallow baking dish. Put ½ cup of tomato sauce on bottom of the pan.

Arrange the chicken over this sauce and sprinkle with a few tablespoons of Parmesan cheese. Put 1 cup of tomato sauce on top of the chicken. Top this with some mozzarella cheese and some more Parmesan cheese if desired.

Cover and bake until heated through, 20 minutes. If you wish to brown the top, remove the foil and run the dish briefly under a hot broiler. Serve hot sprinkled with parsley if desired.
