Basic Sweet Roll Recipe

1 1/2 cups milk, scalded
1 stick butter or margarine
1/2 cup sugar
2 eggs
2 tsp salt
7 cups flour (approximately)
1/2 cup warm water
2 packages dry yeast (or 4 1/2 teaspoons)
1 tsp sugar

Dissolve yeast in warm water with 1 teaspoon of sugar. Set aside. Scald milk in pan on stove until you see bubbles around edge of pan on medium heat.

Remove from heat and pour over stick f cold margarine, stir, add sugar, salt and beaten eggs. Liquid should be cooled down enough to add yeast mixture now.

Add flour last by stirring vigorously. Turn out onto floured drainboard and knead until smooth, turning ¼ turn each stroke.

Allow to rise 1 ½ to 2 hours in buttered bowl that is covered. Beat down with fist and place on floured drainboard.

With a knife cut in the desired portions depending on what shape you will be rolling out. Shape and allow to rise another 1 ½ to 2 hours. Bake at 375°F. Until done and golden colored.
