Cilantro Mayonnaise

3/4 cup reduced-fat mayonnaise
3/4 cup loosely packet cilantro leaves
1 Tbs fresh lime juice
1 tsp light soy sauce
1 small garlic clove

Place the mayonnaise, cilantro, lime juice, soy sauce, and garlic in a blender or food processor. Blend until smooth.

Yield 3/4 cup

Turkey or Ham Roll-Ups

4 slices turkey breast (or boiled ham)
4 medium Boston lettuce leaves
Cilantro mayonnaise (see below)
4 scallions
4 red bell pepper strips

Place 1 slice of turkey (or ham) on a lettuce leaf and spread with Cilantro mayonnaise. Add 1 scallion and 1 pepper strip. Fold into a tight, cigar like roll. The Cilantro mayonnaise can be used as a dip instead of a spread if desired.

Rushville Sandwiches

Olive oil or bacon grease
Salt and pepper to taste
2 medium onions
2 lbs ground beef
1 large can baked beans
2 pinches brown sugar (to taste)
4 slices of bacon, sliced thin
2 tsp Worcestershire sauce
Buns
Lettuce or Cabbage (optional)

In a frying pan, caramelize onions in oil. Add salt and pepper to taste. Add ground beef and bacon, cook until browned. Add beans, Worcestershire sauce and brown sugar, cook until heated through and consistency of a sandwich. Serve on a buttered bun with lettuce or shredded cabbage if desired.

Variations: If desired you can add any of the following ingredients: 1 green pepper, 3 stalks of celery, ½ to ¾ cup catsup, ½ cup barbecue sauce, 2 tablespoons yellow or brown mustard or other spices such as cayenne.

Tip: Bacon is really easy to slice thin when it is frozen.

Margaret's Hot Bandanas

Filling:
1 (7 ounce) jar Kalamata Olives, drained and sliced
1 1/2 cups diced, peeled white onion
1 lb ripe beefsteak tomatoes, chopped
1 1/2 cups mozzarella cheese, diced
1 cup grated parmesan cheese
2 cloves pressed garlic
2 tsp salt
1/4 tsp pepper
2 tsp dried basil
1/4 cup wine vinegar (red wine vinegar)
1/3 cup olive oil

Buns:
10 hard Kaiser rolls
3 Tbs soft butter
3 fresh basil leaves

Mix the first 5 ingredients in a bowl and set aside. Mix the next 6 ingredients in a small jar and shake to mix. Mix dressing and tomato mixture. Hollow out Kaiser rolls and put mixture in them. Bake at 350 for 20 to 25 minutes. Serve in cloth bandanas if desired.

***It would be pretty to serve these with bandanas on them, but they are so yummy, we generally don't find the bandanas in time before we are diving into them.

I loved that show where I found this recipe...I don't think it's on anymore...it was a show where they went around the US and had people make their family favorites. Perfect for recipe collectors like me...tried and true recipes. This is delicious...give it a try!

German Pizza

1/2 lb bologna, deli sliced
1/2 lb ham, deli sliced
Canned mushrooms
Gouda cheese
Pepperoncia (salad peppers)
Oregano
Cream
French bread

Mix all ingredients to the desired amount put on top of French bread and bake till heated through at 375 degrees. Can freeze up to a few months. If frozen allow to sit out at room temperature for 10 to 20 minutes before baking. You may have to bake it slightly longer after it's been frozen. Note: Salami can be used but it makes it really salty.

***COMMENT: This is one of our favorites for a quick gourmet dinner. It makes alot...but the cool thing is...you can freeze it right on the bread, just like you are going to stick it right in the oven. So, you just take it out for a bit so it starts to thaw and pop it in the oven. If you haven't had this at my house, come on over, I'll show you how to make it. There aren't any measurements, but its hard to really mess it up once you see it done once. I know that Tommy would never complain about having to eat this for dinner. :o)

Chicken Noodle Burgers

2 lbs Hamburger
Onions, chopped (to taste)
1 can (large) Chicken Noodle Soup

Brown beef with dried or fresh onions. Drain. Add soup (no water), season with pepper if desired. Serve on buns like sloppy joes.

***STORY: This recipe seems odd but you HAVE to try it. This is one of our family's favorites! We grew up with this meal, it was easy to make and very yummy.

I remember one time, we were going to go to my Mom's for dinner on a Sunday night. She asked what I wanted to eat and I asked if we could have this. She said sure, we hadn't eaten it in a while.

I remember preparing Melanie (6) and Julie (12 or so) before we went. They were never really keen on trying new things and so I said..."Look...we are going to have something a little different at my Mom's house this afternoon. I don't care if you don't like it...but don't snicker before you try it, you might really like it."

They were really polite and tried it...no snickering! Then Lo and BEHOLD...I noticed that they ate their whole sandwich! WOW! I started thinking...either I scared them, or they really liked it. So we were on our way home and I asked if they liked it, they both said they did and asked when we could eat it again. So, it became part of my family's favorites.

Stuffed Hot Dogs

Hot dogs
Cheese
Relish
Bacon

Use the indirect method of grilling (not directly over the fire, off to the side). Slit hot dogs lengthwise, within a 1/4" of each end. Stuff hot dogs with cheese and relish and wrap in bacon. Place on cooking grate over drip pan and cook with the grill lid on for 15 to 20 minutes or until bacon is crisp.
