Spaghetti Bolognese

2 Tbs Olive Oil
1 Medium Onion, finely chopped
2 garlic cloves, finely chopped
3 slices unsmoked bacon, thinly sliced
1/2 lb ground beef
1 celery stalk
1 medium carrot, grated
4 oz mushrooms, sliced
4 Tbs tomato paste
1/2 cup white wine
4 medium tomatoes, skinned and chopped
or 1 or 2 large cans of diced tomatoes
1 can beef stock
2 tsp brown sugar
1 pinch nutmeg

Brown vegetables with bacon in olive oil. Brown meat separately, drain. Combine ingredients and simmer for 45 minutes. You can blend portions to make it more saucy if desired.
